Jamaican Jerk Mop Sauce
Great for ribs or chicken. A combo of sweet and spicy!

- 1 tsp Salt
- 1 tsp Pepper
- 1/4 tbsp Ground cloves
- 1/4 tbsp Red pepper flakes More or less to taste
- 1/4 tbsp Nutmeg
- 1/2 tbsp Garlic powder
- 1/2 tbsp Ground ginger
- 1/2 tbsp Paprika
- 1 tbsp Siracha
- 1 tbsp Minced garlic
- 1/2 cup Brown sugar
- 1 cup Chicken stock
- 1 cup Ketchup
Mix all ingredients into a medium sauce pot
Cook at medium until it starts boiling
Immedietly turn burner to low. Stir until it thickens to the consistency of a glaze
This rib sauce is a different spin on BBQ ribs. When combined with our Jamaican Jerk Rub, you'll find a warm and sweet unique flavor.
Best to apply this sauce to your chicken or ribs toward the end of the cooking cycle. Don't put it on too early, or it will burn!
If smoking my ribs, I'll put this on about an hour before I pull the ribs. If grilling with higher heat, then anywhere from 5-10 minutes will work (depending upon how long and how hot your cook is).
When cooking ribs in the Sun Oven, you can pretty much apply this at any point since nothing will burn in the Sun Oven. I will generally apply the sauce about an hour before I pull the ribs.
This also serves as a great dipping sauce! So what you don't use on the grill you can set on the table.
